Ingredients

  • 3 - eggs, separated
  • - grated peel of 1 orange
  • - grated peel of 1 lemon
  • 1/2 cup honey
  • 4 tablespoons melted butter
  • 3/4 cup flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves or allspice
  • 1 teaspoon ground nutmeg
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt

How To Make honey cake

  • Step 1
    In a 2 quart bowl, beat egg whites until stiff peaks form. Set aside. in a separate 2 quart bowl, beat eggs yolks and grated peels until yolks thicken slightly. Stir in honey and melted butter. Add flour, spices, baking powder and soda, and salt and beat until thoroughly blended. Fold in egg whites. Pour batter into well greased loaf pan. Shield ends of the loaf with strips of aluminum foil. Place pan on an inverted saucer or cereal bowl in the oven to elevate. Microwave, uncovered, at power level low and defrost for 6 1/2 minutes. Remove foil shields. Microwave at power level low and defrost an additional 3 to 9 minutes, or until top of cake feels springy. Let stand on a counter for 5 minutes before inverting onto serving plate.
