This is my grandmothers recipe i have loved as a child and still do. I make this at Easter and other holidays my family and friends love it.

Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/4 teaspoons baking soda
  • 3/4 teaspoon grated nutmeg
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 4 large eggs
  • 1 1/4 cups packed light brown sugar
  • 1 cup granulated sugar
  • 1 1/2 cups vegtable oil
  • 1/4 cup heavy cream
  • 1 teaspoon vanillia extract
  • 1 teaspoon grated orange peel
  • 3 cups shredded carrots
  • 1 cup walnuts chopped
  • FROSTING FOR CAKE
  • 1 ounce 8oz cream cheese softned
  • 1/2 cup unsalted butter
  • 1 teaspoon grated orange zest
  • 2 teaspoons orange juice, fresh
  • 1 teaspoon vanillia extract
  • 2 cups sifted confectioners sugar
  • - walnut pieces

How To Make homemade carrot cake

  • Step 1
    Preheat oven to 350 degrees.Butter and dust with flour three 8x2 inch round cake pans.
  • Step 2
    In a bowl mix flour baking powder cinnamon baking soda nutmeg salt and cloves.
  • Step 3
    In another bowl beat eggs and brown sugar and white sugar on low beat in oil,cream vanillia and orange zest.Beat in flour mixture from above add carrots and nuts.
  • Step 4
    Pour batter into pans bake until golden brown and the pick test comes out clean.Let cake cool and put on cake rack.Bake for 38 to 40 mins or until done
  • Step 5
    For frosting.In a bowl beat cream cheese butter orange zest orange juice and vanillia until smooth.On low beat in sugar.On high beat for 30 sec.Place cake layer on cake plate spread 3/4 cup frosting over it repeat for each layer once you get layers frost frost enitre cake spoon walnut pieces on to the side of the cake and garnish with walnut halves on top.
