homemade carrot cake mix
I have so many limitations in how much work I can do at one time any more, and I am so poor these days at multi-tasking, I find these home made mixes very helpful. I can make the mixes one day, and put them away. Then I can make the cake at another time with a lot less effort! This is another cake mix I have found to go with my collection of home made basic recipes. Enjoy it!

Ingredients
- 2 cups sugar
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/4 teaspoon nutmeg
- 2 teaspoons powdered vanilla
- 1/2 cup chopped walnuts or pecans

Step 1BAKING DIRECTIONS FOR THE CAKE MIX: Attach label: Carrot Cake Makes 1 13x9-inch cake (or 2- 8" rounds) 1 package Carrot Cake Mix (see above!) 1 1/2 cups vegetable oil 3 large eggs 3 cups grated carrots 1 cup grated or flaked coconut 1 (8-ounce) can crushed pineapple (not-drained)

Step 2Preheat oven to 350 F . Combine the entire jar of mix, vegetable oil, eggs, grated carrots, coconut and undrained pineapple. Mix will until the ingredients are incorporated, then Pour into greased 13x9 inch pan or into 2 8" round pans.
