Ingredients

  • 3 cups cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cloves
  • 2 sticks butter, softened
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 4 - eggs
  • 1 1/4 cups buttermilk

How To Make holiday spice cake

  • Step 1
    Preheat oven to 350 degrees. Butter and flour 3-8" round cake pans. In small mixing bowl, combine cake flour, baking powder, baking soda and all spices. In larger mixing bowl, cream butter, sugar and salt until light and fluffy. Beat in eggs, 1 at a time, beating well after each addition. Beat in dry ingredients and the buttermilk alternately, beginning and ending with the dry ingredients.
  • Step 2
    When batter is well mixed and smooth, divide it among the 3 prepared pans. I have a kitchen scale to make sure they are evenly distributed. Bake for 25 minutes or until toothpick inserted in center comes out clean. Let cool in pan for 10 minutes then turn out onto cooling rack and cool completely. If cake layers are domed, slice off tops with a long serrated knife so they are flat before frosting.
  • Step 3
    Frost with buttercream frosting or cream cheese frosting. Garnish with cocoa powder and chopped pecans or walnuts. For and even better flavor, toast the nuts before garnishing.
