Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 - egg
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • FILLING INGREDIENTS
  • 1/2 cup dried figs, chopped
  • 1/4 cup chopped walnuts
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1 tablespoon cinnamon

  • Step 1
    BATTER: Cream shortening, add sugar and vanilla and cream thoroughly.
  • Step 2
    Add beaten egg and mix thoroughly.
  • Step 3
    Sift dry ingredients, and add alternately with milk.
  • Step 4
    Spread half the batter in greased 8-inch cake pan.
  • Step 5
    Cover with fig filling and add remaining batter.
  • Step 6
    Bake 45 minutes at 350.
  • Step 7
    FILLING: Rinse figs with hot water, then chop fine.
  • Step 8
    Blend with remaining ingredients for coffee-cake filling.
