heritage rhubarb cake

My group of Red Hatters (The Scarlet Floozies) were invited to attend an Elegant High Tea Luncheon. Put on by the Heritage Funeral Home. This rhubarb cake is one of the lovely deserts baked & served, by Paula a director there. Her delicious recipes are to die for! She was gracious enough to share this delicious recipe with us. This is the result and pictures of my baking it today. Now you can enjoy it in your home. A crunchy top with a soft moist inside. Mmmm Yummy! There was no funeral that day, so the courtesy room was set up just for us! We all agreed ....We Will Return!

Ingredients

  • 1-1/2 cup cut up rhubarb, small pieces
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 - egg beaten
  • 1/2 cup soft butter
  • 1 cup applesauce
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups white flour
  • 1 teaspoon baking soda

How To Make heritage rhubarb cake

  • Step 1
    Heat oven to 350 degrees. Grease a 9x13 inch baking pan. Cream brown sugar and soft butter together. **** TIP: If you run out of brown sugar, Just add 1-1/2 Tablespoon of molasses to 1 cup of white sugar! Be sure to add the extra 1/2 cup of white sugar extra, as in the recipe.
  • Step 2
    Add egg and salt. ***** TIP: always break an egg in a separate bowl. That way if you get a bad egg, you will not spoil the cake batter.
  • Step 3
    Stir in applesauce,soda,vanilla and flour. Mix.
  • Step 4
    Add cut up rhubarb, mix. Put into the prepared pan.
  • Step 5
    Sprinkle top of cake with 1/4 cup of sugar, mixed with 1-T cinnamon.
  • Step 6
    Bake for 30-35 minutes. Cool cut and enjoy..
