Helen's Superb Carrot or Plum Cake

3 cgrated carrots (or 2 large jars of baby food plums)

1 cfresh moist raisins

1 ccoconut, flaked

1 cchopped nuts (pecans or walnuts)

FROSTING

12 ozpowdered sugar

2 pkg3 oz cream cheese (room temp)

1 5/8 tspvanilla extract

2 Tbspbutter
-
2 Tbspmilk

1/2 cchopped nuts
How to Make Helen's Superb Carrot or Plum Cake
- 1.In large bowl, beat sugar and oil. Add eggs and beat well.
- Sift together flour, soda, cinnamon, and salt into egg mixture; mix well; fold in carrots and nuts.
- Place batter in greased 9x13 pan; bake for 45 minutes in a 350 oven. (Check once because of oven variances.)
- FROSTING: Beat together powdered sugar, cream cheese, vanilla, butter and milk; spread on cooled carrot cake.
