Helen's Raisins, Carrots and Apples in a Cake

This recipe comes from my mom. Can't remember where she got it.

1/4 cup margarine, softened
1 cup sugar
1 t. cinnamon
1/4 t. nutmeg
1 t. vanilla
1 cup flour
1 t. baking powder
1 cup each peeled and grated tart green apples and carrots
1 cup raisins
1/2 cup nuts (optional)


1Beat butter, sugar, spices and vanilla together; add sifted dry ingredients,
tossing to blend. Mixture will be dry.
2Stir in remaining ingredients. Turn
into buttered 8" square cake pan (no need to pat down) and bake in preheat
350 oven for 40 to 45 minutes. Drizzle glaze over warm cake (recipe
follows). Cool in pan before cutting; cut in squares. Serve with whipped
cream if desired. Serves 9
Lemon Glaze:
Blend 1/2 cup powdered sugar, 1 t. lemon juice and 1 t. water.
