I got this recipe from Weight Watchers and it has become a fave of ours. Great for those watching their weight and for diabetics!!!

Ingredients
- 1 box white cake mix
- 1 can diet Sprite (or any lemon lime soda)
- 1 cup water
- 1 cup Splenda
- 1 teaspoon coconut extract
- 1 small sugar-free cool whip
- - coconut to sprinkle on top
How To Make healthy coconut cake

Step 1Preheat oven to 325 degrees. Spray 9x13 glass dish with cooking spray.

Step 2Mix cake mix and Sprite until well blended. Pour into pan and bake 30 minutes.

Step 3While cake is baking, mix water, splenda and coconut extract and set aside.

Step 4Poke holes in hot cake with a fork. Pour water mixture over cake and allow to cool completely.

Step 5Spread cool whip on cooled cake and sprinkle with coconut.

Step 6Refrigerate until ready to serve.
