hawaiin wedding cake
I use less sugar ,add Pecans, low fat cream cheese in the icing, etc. Any alterations I have ever done to this recipe, it has taken with agility.And I use butter, not margarine!! I even add just a bit more coconut... :)This is a moist, great tasting, very easy cake. You can make it in 15 mins. or less prep.So, if late Saturday night you remember you need a cake for Sunday, NO Worries!!

Ingredients
- 2 cups sugar
- 2 cups flour
- 2 large eggs
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup coconut
- 1 can 20 ounce, of crushed pineapple in its own juice(add the juice)
- CREAM CHEESE ICING
- 1/2 cup margarine
- 1 package (8) ounce package cream cheese
- 1 teaspoon real vanilla extract
- 2 cups confectioners sugar

Step 1Mix sugar, flour, egg, baking soda, and salt together until blended.( I always mix my dry ingredients well before I add the wet. It's a weird taste when you get a mouthful of B. soda!) Add pineapple with its juice,and coconut. Mix well. Pour into a lightly greased 9 x 13" pan. Bake @ 350 F degrees for 30 minutes. Cool and spread on the Cream cheese frosting.

Step 2Cream cheese icing : Combine the margarine/ butter( softened at room temperature), cream cheese( Softened), vanilla, and slowly add the conf. sugar until creamy. I use my mixer.
