I work at the High School and this is one of the cakes we make, So i cut the recipe down to a smaller one. It was wonderful.

Ingredients

  • 2 cups granulated, sugar
  • 2 cups oil, vegetable
  • 2 1/4 cups flour (all purpose)
  • 2 1/8 teaspoons cinnamon
  • 1 3/4 teaspoons allspice, ground
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt, table
  • 2 1/4 cups sweet potato, canned mashed
  • 3 - eggs
  • 1/3 cup water, cold
  • 1 tablespoon water, cold
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup powered sugar
  • 1 tablespoon water, hot
  • 1 5/8 tablespoons water, hot
  • 1/8 teaspoon vanilla extract
  • 2 3/8 teaspoons butter
  • 2 1/8 teaspoons honey

How To Make harvest cake

  • Step 1
    Preheat oven to 350, Spray or butter pans
  • Step 2
    In a large mixing bowl mix oil,granulated sugar, and eggs
  • Step 3
    Mix all dry ingredients together, add dry ingredients slowly to oil mixture. Beat
  • Step 4
    Add water and Vanilla mix until well blended.
  • Step 5
    GLAZE: Mix together powered sugar, hot water, vanilla extract, butter, and honey until well mixed.
  • Step 6
    Pour glaze over cake while warm
