I work at the High School and this is one of the cakes we make, So i cut the recipe down to a smaller one. It was wonderful.

Ingredients
- 2 cups granulated, sugar
- 2 cups oil, vegetable
- 2 1/4 cups flour (all purpose)
- 2 1/8 teaspoons cinnamon
- 1 3/4 teaspoons allspice, ground
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt, table
- 2 1/4 cups sweet potato, canned mashed
- 3 - eggs
- 1/3 cup water, cold
- 1 tablespoon water, cold
- 1 1/2 teaspoons vanilla extract
- 3/4 cup powered sugar
- 1 tablespoon water, hot
- 1 5/8 tablespoons water, hot
- 1/8 teaspoon vanilla extract
- 2 3/8 teaspoons butter
- 2 1/8 teaspoons honey

Step 1Preheat oven to 350, Spray or butter pans

Step 2In a large mixing bowl mix oil,granulated sugar, and eggs

Step 3Mix all dry ingredients together, add dry ingredients slowly to oil mixture. Beat

Step 4Add water and Vanilla mix until well blended.

Step 5GLAZE: Mix together powered sugar, hot water, vanilla extract, butter, and honey until well mixed.

Step 6Pour glaze over cake while warm
