harvest apple cake
I first tasted this cake at a Mother's Club meeting when my 44 year old son was in Cub Scouts. I immediately asked for the recipe and have been baking this cake and sharing this recipe ever since. Don't think you have added too many apples. There is barely enough batter to cover all of the apples. The recipe does list adding nuts as an option. For some reason, I've never made it with nuts.

Ingredients
- 5 - apples, peeled, cored and sliced
- 1 cup vegetable oil
- 1 teaspoon salt
- 1 1/3 cups sugar
- 1 teaspoon cinnamon
- 3 - eggs
- 1 teaspoon vanilla
- 2 cups plus 2 tbsp. flour
- 1 teaspoon baking soda
- 1/2 cup nuts (optional)
How To Make harvest apple cake

Step 1Preheat oven to 350°. Grease a bundt or tube pan.

Step 2Cream oil, salt, sugar, cinnamon, eggs and vanilla. Stir in sliced apples. Sift flour and baking soda and add to creamed mixture.

Step 3Pour into prepared pan and bake approx. 45 minutes. If a tube pan is used, add 10-15 minutes to baking time.

Step 4Dust with confectioner's sugar after cake has cooled completely.
