Halloween will be even sweeter if you make this magic nut cake. Very soft and moist, you taste the nutmeg and cinnamon in the cake. The cream cheese frosting gives it a sweet, buttery, and creamy topping. This pumpkin cake reminds us of a carrot cake.

Ingredients
- CAKE
- 3 - eggs
- 16 ounces canned pumpkin
- 1/2 cup water
- 3/4 cup vegetable oil
- 2 1/2 cups all-purpose flour
- 2 cups sugar
- 1 1/2 teaspoons baking soda
- 1 1/4 teaspoons salt
- 3/4 teaspoon nutmeg
- 3/4 teaspoon cinnamon
- 1/2 cup chopped walnuts
- 1/2 cup raisins (optional)
- CREAM CHEESE FROSTING
- 4 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 3 tablespoons softened butter
- 2 1/4 cups sifted powdered sugar

Step 1Mix together the first 4 ingredients.

Step 2Add the rest of the ingredients and mix well.

Step 3Pour batter into a 9 x 13 Pyrex pan. Bake for 1 hour 15 minutes at 350 degrees or until a toothpick comes out clean.

Step 4Wait until the cake is cool and mix the frosting.

Step 5For the cream cheese frosting, add frosting ingredients to a mixer. Beat until well blended and creamy.
