This is great fresh from the oven, cold, with or without margarine or butter or as French Toast the next day (if it even lasts that long!)

Ingredients

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 ¼ teaspoons baking powder
  • 1 pinch salt
  • 1 cup sugar
  • 2 - eggs
  • ½ cup margarine
  • ½ cup milk
  • ¾ cup yogurt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 4 - ripe bananas (mashed)

How To Make halfway healthy banana loaf

  • Step 1
    Preheat oven to 350 F.
  • Step 2
    Mix first 5 dry ingredients in a bowl.
  • Step 3
    Rub margarine into the dry mix until it is all blended and crumbly.
  • Step 4
    Add eggs and mix in.
  • Step 5
    In a separate container, mix milk, vanilla and yogurt and add the baking soda.
  • Step 6
    Add milk and yogurt mixture to the flour mixture and stir well.
  • Step 7
    Add mashed bananas and stir until mixed.
  • Step 8
    Pour batter in a greased 9"x5" loaf pan and bake for 1 ½ hour.
