I love this cake in fall but it's good at any time of the year. It's a dense cake but it's very moist. The tartness of the apples, all the spices, and the slight hint of the citrus from the orange complement each other nicely. It has a slightly crisp outside and the inside is moist and full of apples and pecans. I know there is a lot of disagreement about the 2 cups of oil in this recipe. We swear that the autumn leaves began to fall just as we pulled this delicious cake from the oven. This is a dense and moist Bundt cake with apples in every bite. It seems like there is too much oil, but the amount works perfectly in the recipe. We love the slight citrus flavor with the apples and fall spices. Drizzling the glaze (that has a hint of orange) is just right. You'll find excuses to make this cake year-round but it's the perfect cake for fall.
Ingredients
- 2 cups sugar
- 3 - eggs
- 2 cups vegetable oil
- 1 - orange (squeeze juice save peel for zest)
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 tablespoons cinnamon
- 2 teaspoons pure vanilla extract
- 1 teaspoon nutmeg
- 3 large Granny Smith apples, peeled and cored and cubed in small pieces
- 1 cup chopped pecans
- GLAZE
- 1 cup powdered sugar
- 1 teaspoon orange zest
- 1 dash orange extract (optional)
- 1 tablespoon milk (depending on how thick you want your glaze)
How To Make granny smith apple bundt cake

Step 1Prepare Bundt pan (butter and flour or Baker's Joy) and preheat oven to 325 degrees.

Step 2Beat together sugar, eggs, oil, vanilla, and orange juice. Mix until smooth.

Step 3Then slowly add the flour, salt, baking soda, cinnamon, and nutmeg mixing as you go.

Step 4Fold in apples and pecans. The batter will be very thick and dense.

Step 5Spoon batter into prepared pan evenly.

Step 6Bake in preheated oven for 1 hour and 15 minutes or until a tester comes clean. Allow cake to sit in the pan for 10-15 minutes and then turn onto a cake plate. Allow to cool completely.

Step 7Mix glaze to desired consistency.
