grandmother's frozen cheesecake

Mom used to make this all the time. She told my brother it was ice cream (he was an ice cream addict) because he did not like cream cheese. He ate it all! This is very rich and so simple to make. NO BAKING. I place plastic wrap in the trays before filling so when it is frozen can remove and wrap without having to store in the ice tray

Ingredients
- 3 -- 3 ounces cream cheese (regular)
- 1 cup sugar
- 3 - eggs, separated (using whipped whites only)
- 1 cup whipping cream, whipped
- 1/2 teaspoon salt
- 1/2 teaspoon almond extract **
- 1 teaspoon vanilla extract
- - graham cracker crumbs
How To Make grandmother's frozen cheesecake

Step 1Mix cream cheese, salt, vanilla, sugar and almond. Beat well until smooth and no lumps.

Step 2Fold in whipped cream and then fold in whipped egg whites.

Step 3Line 2 ice cube trays (old fashioned without center) or similar container with cracker crumbs

Step 4Add mixture and sprinkle lightly with additional graham cracker crumbs.

Step 5Freeze Overnight (cover with foil )

Step 6** I have used almond butter extract as well
