This recipe is from my mother-in-law. She had added it to a hometown recipe book that was published for a fundraiser. "The Art of Cooking in Egg Harbor City" (NJ). No date is on the book, so I don't know exactly when it was printed. I've written the directions exactly as she had them listed. :)

  • CAKE:

  • 1/2 c
    butter
  • 1 c
    sugar
  • 2
    eggs, separated
  • 1/4 tsp
    salt
  • 1/2 c
    milk
  • 2 tsp
    baking powder
  • 1 1/2 c
    flour
  • 1/2 tsp
    vanilla
  • CRUMBS:

  • 4 Tbsp
    flour
  • 4 Tbsp
    sugar (2 brown & 2 white)
  • 2 Tbsp
    butter
  • 2 Tbsp
    cinnamon

How to Make Grandmom Elaine's Crumb Cake

Step-by-Step

  1. Combine butter, brown & white sugar, and cinnamon to make crumbs. Set aside and make the cake.
  2. Cream butter, then gradually add sugar, then add the egg yolks.
  3. Mix alternately with milk and sifted dry ingredients.
  4. Add vanilla and lastly fold in stiffly beaten egg whites.
  5. Pour batter and sprinkle on crumbs.
  6. Bake in a preheated oven, at 350 degrees, for 35 minutes.
