This recipe is from my mother-in-law. She had added it to a hometown recipe book that was published for a fundraiser. "The Art of Cooking in Egg Harbor City" (NJ). No date is on the book, so I don't know exactly when it was printed. I've written the directions exactly as she had them listed. :)

Ingredients

CAKE:

1/2 c
butter
1 c
sugar
2
eggs, separated
1/4 tsp
salt
1/2 c
milk
2 tsp
baking powder
1 1/2 c
flour
1/2 tsp
vanilla

CRUMBS:

4 Tbsp
flour
4 Tbsp
sugar (2 brown & 2 white)
2 Tbsp
butter
2 Tbsp
cinnamon

How to Make Grandmom Elaine's Crumb Cake

Step-by-Step

  • 1Combine butter, brown & white sugar, and cinnamon to make crumbs. Set aside and make the cake.
  • 2Cream butter, then gradually add sugar, then add the egg yolks.
  • 3Mix alternately with milk and sifted dry ingredients.
  • 4Add vanilla and lastly fold in stiffly beaten egg whites.
  • 5Pour batter and sprinkle on crumbs.
  • 6Bake in a preheated oven, at 350 degrees, for 35 minutes.
