grandmas luscious rhubarb cake
People give me rhubarb in the spring so I make them something for it as payment, usually its a pie but this year my neighbors daughters new husband wanted a cake like his grandmother used to make. So went to my grandmothers recipes and found one, he loved it. The brown sugar cream cheese frosting is my recipe I usually put it on applesauce cake.

Ingredients
- 2 cups rhubarb (diced)
- 1/2 cup brown sugar
- 1/2 cup butter
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 1 large egg
- 2 cups flour
- 1 teaspoon baking soda ( or bicarbonate as grandmas recipe says)
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup sour milk or buttermilk
- BROWN SUGAR CREAM CHEESE FROSTING
- 8 ounces cream cheese
- 1/4 cup butter (sofened)
- 3/4 cup brown sugar
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla
How To Make grandmas luscious rhubarb cake

Step 1Sift flour, baking soda,cinnamon, and salt, set aside.

Step 2Cream butter, sugar, egg and vanilla, add the dry ingredience alternately with the sour milk mixing well.

Step 3Add rhubarb mixture to batter, pour into a greased 13x9 pan bake in a 350 oven for 50-55 minutes. cool

Step 4Cream together cream cheese and butter, add brown sugar, powdered sugar and vanilla mix well frost cake.
