This is my Grandmas Carrot-Pineapple Cake. It is WONDERFUL !!! I am not sure where it came from but she has made it for years for all the WW2 soldiers and sailors who graced her home every Sunday for a home cooked meal. She would always bring home the militery who didn't have a place to eat after Sunday services in Washington DC and San Diego CA. It was also a staple in all those old fashioned Diners she managed over the years.

Ingredients

  • PUT IN LARGE BOWL AND MAKE A WELL IN CENTER:

  • 2 1/2 c
    all purpose flour
  • 2 c
    sugar
  • 2 tsp
    baking soda
  • 1 tsp
    ground cinnamon
  • 1 1/2 c
    crisco oil
  • 3
    eggs (whipped with fork)
  • MIX WELL THEN ADD:

  • 2 tsp
    vanilla extract
  • 1 c
    cocoanut
  • 1 c
    grated carrots
  • 1 c
    chopped nuts
  • 1 c
    crushed pineapple
  • MIX WELL AND BAKE IN GREASED OBLONG PAN AT 350 DEGREES 50-60 MINUTES

  • TOPPING

  • 1/2 c
    buttermilk
  • 1 c
    sugar
  • 1/2 tsp
    baking soda
  • 1 tsp
    vanilla extract
  • COOK OVER LOW HEAT FOR 5 MINUTES, SPREAD ON HOT CAKE

How to Make Grandmas Carrot-Pineapple Cake

Step-by-Step

  1. The Topping will soak into the hot cake. It is very moist and tastes wonderful !!! If you don't want the topping you can use cream cheese frosting. Either way it is Yummy !!
