Ingredients
- 3 cups self rising flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger powder
- 1 cup cane sugar
- 1 cup brown sugar
- 1 cup sour cream
- 3/4 cup vegetable oil
- 4 - eggs
- 1 1/2 teaspoons vanilla extract
- 1 pound carrots, grated
- 1 can pineapple, crushed 8 oz. (drained)
- 1 cup walnut pieces
- 1 cup coconut flakes
- 1/2 cup seedless raisins
How To Make grandma's carrot cake

Step 1Preheat oven to 350 degrees Grease a 9"by 13" baking pan

Step 2In a large mixing bowl mix the flour,baking soda,cinnamon, ginger and nutmeg.

Step 3On another bowl, mix the white sugar, brown sugar, sour cream, eggs,vegetable oil and vainilla. Add this mixture to the dry ingredients mixture. Mix well.

Step 4Add Slowly add the walnuts, carrots, coconut flakes and raisins to the mixture.

Step 5Pour onto greased pan and bake for aroung 40-45 minutes. Chill and cover with cream cheese frosting.
