This recipe I learned to make it from my mother but the original recipe belonged to my grandmother. It is delicious.

Ingredients For grandma's carrot cake

3 cself rising flour

2 tspbaking soda

2 tspground cinnamon

1/2 tspnutmeg

1/4 tspginger powder
-
1 ccane sugar
-
1 cbrown sugar
-
1 csour cream
-
3/4 cvegetable oil
-
4eggs
-
1 1/2 tspvanilla extract

1 lbcarrots, grated
-
1 canpineapple, crushed 8 oz. (drained)

1 cwalnut pieces
-
1 ccoconut flakes
-
1/2 cseedless raisins
How To Make grandma's carrot cake

1Preheat oven to 350 degrees Grease a 9"by 13" baking pan

2In a large mixing bowl mix the flour,baking soda,cinnamon, ginger and nutmeg.

3On another bowl, mix the white sugar, brown sugar, sour cream, eggs,vegetable oil and vainilla. Add this mixture to the dry ingredients mixture. Mix well.

4Add Slowly add the walnuts, carrots, coconut flakes and raisins to the mixture.

5Pour onto greased pan and bake for aroung 40-45 minutes. Chill and cover with cream cheese frosting.
