Grandma used any excuse to make her carrot cake. It was one of my favorites as a child and I'm happy to pass it on to the next generation.

Ingredients

1 1/2 c
oil (i use canola)
4
eggs
3 c
shredded carrots
1/4 tsp
black walnut extract
2 c
self rising flour
1 tsp
cinnamon
1 tsp
vanilla
1 c
walnuts

Step-By-Step

1mix all ingredients together in a large bowl.
2Bake in a tube pan greased and floured at 350 for 1 to 1 1/2 hours.
3While cake is baking prepare the topping:
1 cup white sugar
1/2 cup buttermilk
1 Tablespoon white corn syrup
mix and stir constantly - let come to a rolling boil
boil 5-7 minutes. Pour over cake when it comes from the oven.
4Let cake cool in pan.
