grandma's carrot cake

Grandma used any excuse to make her carrot cake. It was one of my favorites as a child and I'm happy to pass it on to the next generation.

Ingredients
- 1 1/2 cups oil (i use canola)
- 4 - eggs
- 3 cups shredded carrots
- 1/4 teaspoon black walnut extract
- 2 cups self rising flour
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup walnuts
How To Make grandma's carrot cake

Step 1mix all ingredients together in a large bowl.

Step 2Bake in a tube pan greased and floured at 350 for 1 to 1 1/2 hours.

Step 3While cake is baking prepare the topping: 1 cup white sugar 1/2 cup buttermilk 1 Tablespoon white corn syrup mix and stir constantly - let come to a rolling boil boil 5-7 minutes. Pour over cake when it comes from the oven.

Step 4Let cake cool in pan.
