Grandma used to fix this for my dad's birthday. She would use a plain vanilla icing on it then cover the iced cake with coconut. Yummm!

Ingredients

  • 2 c
    unsifted flour
  • 2 Tbsp
    baking soda
  • 2 tsp
    ground cinnamon
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    salt
  • 3
    eggs
  • 1 1/2 c
    sugar
  • 3/4 c
    mayonnaise - (not miracle whip)
  • 1 can(s)
    8oz crushed pineapple in juice
  • 2 c
    coarsely shredded carrots
  • 3/4 c
    chopped wallnuts or pecans

How to Make Grandma's Carrot Cake

Step-by-Step

  1. Grease & flour 2 round baking pans (8in). Set oven to 350 degrees and bake for 30 to 35 minutes.
  2. in medium bowl stir together first five ingredients, then set aside.
  3. In large bowl with mixer at medium speed beat next 4 ingredients until well blended. Gradually beat in flour mixture until well blended. With spoon stir in carrots & nuts, turn into prepared pans and bake. When cooled use favorite frosting.
