Grandma used to fix this for my dad's birthday. She would use a plain vanilla icing on it then cover the iced cake with coconut. Yummm!

Ingredients

  • 2 cups unsifted flour
  • 2 tablespoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3 - eggs
  • 1 1/2 cups sugar
  • 3/4 cup mayonnaise - (not miracle whip)
  • 1 can 8oz crushed pineapple in juice
  • 2 cups coarsely shredded carrots
  • 3/4 cup chopped wallnuts or pecans

How To Make grandma's carrot cake

  • Step 1
    Grease & flour 2 round baking pans (8in). Set oven to 350 degrees and bake for 30 to 35 minutes.
  • Step 2
    in medium bowl stir together first five ingredients, then set aside.
  • Step 3
    In large bowl with mixer at medium speed beat next 4 ingredients until well blended. Gradually beat in flour mixture until well blended. With spoon stir in carrots & nuts, turn into prepared pans and bake. When cooled use favorite frosting.
