Grandma used to fix this for my dad's birthday. She would use a plain vanilla icing on it then cover the iced cake with coconut. Yummm!

Ingredients

unsifted flour
2 Tbsp
baking soda
2 tsp
ground cinnamon
1/2 tsp
ground ginger
1/2 tsp
salt
3
eggs
1 1/2 c
sugar
3/4 c
mayonnaise - (not miracle whip)
1 can(s)
8oz crushed pineapple in juice
2 c
coarsely shredded carrots
3/4 c
chopped wallnuts or pecans

How to Make Grandma's Carrot Cake

Step-by-Step

  • 1Grease & flour 2 round baking pans (8in). Set oven to 350 degrees and bake for 30 to 35 minutes.
  • 2in medium bowl stir together first five ingredients, then set aside.
  • 3In large bowl with mixer at medium speed beat next 4 ingredients until well blended. Gradually beat in flour mixture until well blended. With spoon stir in carrots & nuts, turn into prepared pans and bake. When cooled use favorite frosting.
