grandma's carrot cake

Grandma used to fix this for my dad's birthday. She would use a plain vanilla icing on it then cover the iced cake with coconut. Yummm!

Ingredients
- 2 cups unsifted flour
- 2 tablespoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 3 - eggs
- 1 1/2 cups sugar
- 3/4 cup mayonnaise - (not miracle whip)
- 1 can 8oz crushed pineapple in juice
- 2 cups coarsely shredded carrots
- 3/4 cup chopped wallnuts or pecans
How To Make grandma's carrot cake

Step 1Grease & flour 2 round baking pans (8in). Set oven to 350 degrees and bake for 30 to 35 minutes.

Step 2in medium bowl stir together first five ingredients, then set aside.

Step 3In large bowl with mixer at medium speed beat next 4 ingredients until well blended. Gradually beat in flour mixture until well blended. With spoon stir in carrots & nuts, turn into prepared pans and bake. When cooled use favorite frosting.
