grandma sweet potato cake

I never care to much about sweet potatoes, but when my grandmother make this cake , I would eat several slices of it ,of course I would add my own twist to it by placing ice cream on top when she first take it out of the oven.

Ingredients
- 1 1/2 cups salad oil
- 2 cups suagar
- 4 - eggs (separated)
- 4 tablespoons hot water
- 2 1/2 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon nutmeg
- 1 cup pecans
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 large sweet potato
How To Make grandma sweet potato cake

Step 1Combine oil and sugar in a large bowl. Beat until smoth, add egg yolks. Beat well , add hot water. Combine dry ingredients. Blead into sugar mixture. stir in boil potatoes, pecan, ans vanilla. blean throughly. Beat egg whites until a stiff peak. Pour into batter mixture then pour into 3 greaseed and loured 8 inch cake pan. Bake at 350'F for 25 to 35 minutes. let cool

Step 2FILLING: 1 cup sugar 1 cup milk ( can) 3 eggs yolks 1/2 tsp. vanilla 1 can of coconut Mix together and spread over cool cake.
