In 1995 I worked part-time assisting an elderly woman, who needed a little help cleaning, and occasionally going to shop with her. Mary was an elegant,intelligent lady, formerly a nurse, and a wonderful cook. when her husband died, she lived alone, still enjoyed a cocktail in the afternoons, and she made herself wonderful meals using fresh fish,and often home baked cookies,pies and cakes. She still entertained old friends at lunch or for dinner, and this is a dessert she served.

Ingredients
- CAKE INGREDIENTS:
- 4 - eggs
- 1 cup sugar
- 1 teaspoon lemon extract
- 1/2 cup potato flour
- 1/4 teaspoon soda
- 3/4 teaspoon cream of tartar
- FILLING INGREDIENTS:
- 4 tablespoons sugar
- 1/8 teaspoon salt
- 1 ounce baking chocolate, chopped
- 2 tablespoons cream (heavy)
- 1 cup whipping cream (heavy)
- 1 teaspoon vanilla extract

Step 1Preheat oven to 350 degrees. Pepare two round,layer-cake pans.

Step 2Mix together eggs, sugar, lemon extract, potato flour and lemon extract, with an electric hand- blender. Pour half the batter into each cake pan. Bake 15-20 minutes.

Step 3Using a double boiler, stir sugar, salt,chocolate until melted. Remove from heat and add 2 Tbs.cream and beat with a wire whisk until all ingredients are well-blended. Cool thoroughly.

Step 4Whip 1 cup heavy cream and 1/2 tsp. vanilla, fold this into the cooled chocolate mixture.

Step 5Split each layer of cake horizonally, and spread the chocolate cream filling on each layer. Chill for an hour or more, if not serving immediately.
