I wasn't a cheesecake fan until my granddaughter made this one. I have it in a family cookbook honoring Myrtle Herold's 83rd Birthday, in 1987. Grandma Herold was my step-grandma and notorious in Peoria, Il. for being an excellent cook and baker. This is an easy and delicious recipe. I have used a dollop of Strawberry preserves on each serving when I didn't have pie filling.

Ingredients

  • 1 package yellow cake mix
  • 1/3 cup soft butter
  • 3 - large eggs
  • 3/4 cup sugar
  • 2 teaspoons vanilla
  • 2 packages softened cream cheese (8 oz)
  • 2 cups sour cream
  • 1 teaspoon vanilla
  • 1/4 cup sugar
  • 1 can cherry or strawberry pie filling

How To Make grandma herold's cherry cheesecake

  • Step 1
    Beat dry cake mix, 1/3 cup butter and 1 egg in large bowl at low speed until crumbly. Press into an ungreased 13 X 9 inch pan.
  • Step 2
    Beat remaining 2 eggs, 3/4 cup sugar, 2 tsp. vanilla, and 2 cream cheese until smooth and fluffy. Spread over crumb mixture. Bake at 350 degrees for 20 - 25 minutes or until set.
  • Step 3
    Mix sour cream, 1/4 c. sugar, and 1 t. vanilla together and spread over cream cheese. Cool.
  • Step 4
    Spread pie filling over sour cream. Cover and refrigerate for at least 8 hrs.
