grandma goldies carrot cake
Another wonderful recipe given to me by my ex mother in law. Some women don't get along with their mother in laws but mine was wonderful. She was a great cook and she had a loving heart. This recipe is at least 40 years old and was brought to my ex mother in law from a family friend from Arkansas. None of us had ever heard of a carrot cake!

Ingredients
- 1 3/4 cups sugar
- 1 1/4 cups oil
- 2 cups flour
- 4 - unbeaten eggs
- 2 teaspoons baking powder
- 2 teaspoons salt
- 2 teaspoons cinnamon
- 3 cups grated carrots
- 1/2 cup finely chopped nuts (i like walnuts or pecans)
- FROSTING
- 1 box powdered sugar
- 8 ounces cream cheese
- 1/2 - cube butter
- 2 teaspoons vanilla
- 1 - small can drained crushed pineapple

Step 1Cream sugar and oil, add eggs and dry ingredients.

Step 2put in two greased and floured pans(or a 9X13 baking dish) and bake 40 min at 350 degrees. Check with a toothpick for doneness.

Step 3Frosting: Cream powdered sugar with butter and cream cheese. Add vanilla and gradually add crushed pineapple. Frost cake.
