I love this cake! It was my Grandpa's favorite and is one of mine too!

Ingredients

1 1/3 cups boiling water
1 cup quick cook oats
2 - eggs
1/2 cup shortening
1 cup brown sugar
1 cup white sugar
1 1/3 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
TOPPING
3/4 stick margarine, melted
1/2 cup brown sugar
1/4 cup evaporated milk
1 teaspoon vanilla
1 cup coconut

How To Make grandma brecht's oatmeal cake

Step 1

Pour boiling water into quick oats and set aside for a few minutes.

Step 2

Mix remaining ingredients with oatmeal and bake at 350 degrees for 30 minutes.
Step 3

While cake is baking, prepare topping and put in refrigerator.
Step 4

Let cake set for about 15 minutes, then add topping. Place cake under broiler until coconut is slightly browned.
Step 5

Let cake cool and enjoy! *this cake is good warm, but I really like to put mine in the refrigerator and eat it cold. :)
