grandma betty's carrot cake

Ingredients

• 1 1/2 cups salad oil
• 1 cup sugar
• 4 - eggs one at a time {mix well} gradually add
• 2 cups sifted flour
• 1 teaspoon baking soda
• 3 tablespoons cinnamon
• 3 tablespoons vanilla extract
• 3 cups finely grated carrots
• 1 teaspoon salt
• MIX WELL BAKE AT 350 DEGREES TILL DONE ABOUT 1 - 1 1/2 HRS IN A TUBE PAN
• NUT ICING
• 1 - stick butter melted
• 1 - 3 oz. philly cream cheese
• BEAT TILL CREAMY THEN GRADUALLY ADD
• 1 - box confectioners powered sugar
• 1 tablespoon vanilla extract
• 1 cup chopped pecans
• WHENEVER I MAKE THIS CAKE THE ICING RECIPE IS REALLY TOO MUCH FOR ONE CAKE SO I USUALLY DOUBLE IT AND IT IS ENOUGH ICING FOR 3 CAKES
