THIS IS A VERY DELICIOUS CAKE. EVERYTIME I MAKE IT PEOPLE REALLY GOBBLE IT DOWN AND COMMENT ON HOW DELICIOUS IT IS. IN FACT THEY ALWAYS WANT ME TO MAKE ONE FOR CHRISTMAS.

Ingredients
- 1 1/2 cups salad oil
- 1 cup sugar
- 4 - eggs one at a time {mix well} gradually add
- 2 cups sifted flour
- 1 teaspoon baking soda
- 3 tablespoons cinnamon
- 3 tablespoons vanilla extract
- 3 cups finely grated carrots
- 1 teaspoon salt
- MIX WELL BAKE AT 350 DEGREES TILL DONE ABOUT 1 - 1 1/2 HRS IN A TUBE PAN
- NUT ICING
- 1 - stick butter melted
- 1 - 3 oz. philly cream cheese
- BEAT TILL CREAMY THEN GRADUALLY ADD
- 1 - box confectioners powered sugar
- 1 tablespoon vanilla extract
- 1 cup chopped pecans
- WHENEVER I MAKE THIS CAKE THE ICING RECIPE IS REALLY TOO MUCH FOR ONE CAKE SO I USUALLY DOUBLE IT AND IT IS ENOUGH ICING FOR 3 CAKES
