This recipe is popular with our entire family. It originated (in our family) with my husband's Aunt Ruby. She was a wonderful cook and a great hostess. These are very rich and gooey, which makes them great with coffee. I only make them around Christmas and we share them with our neighbors.

Ingredients

  • 1 box
    butter cake mix
  • 4 large
    eggs
  • 2 stick
    butter or margarine
  • 1 c
    chopped pecans
  • 8 oz
    cream cheese
  • 1 tsp
    vanilla
  • 4 c
    confectioners' sugar
  • 1 pinch
    salt

How to Make Gooey Butter Pecan Bars

Step-by-Step

  1. Mix together cake mix, one egg, one stick margarine (or butter) and one cup chopped pecans.
  2. Pat the above mixture into a 9" x 12" pan, forming crust.
  3. Mix together cream cheese, vanilla, one stick margarine (or butter), three eggs, powdered sugar and a pinch of salt.
  4. Pour this mixture over crust mixture. Bake at 325 for about 45 minutes.
  5. Let cool completely. These are very rich, cut into small, bite size pieces to serve. Store in refrigerator. Really good with coffee. Keeps well for weeks.
