gooey butter pecan bars

This recipe is popular with our entire family. It originated (in our family) with my husband's Aunt Ruby. She was a wonderful cook and a great hostess. These are very rich and gooey, which makes them great with coffee. I only make them around Christmas and we share them with our neighbors.

Ingredients

  • 1 box butter cake mix
  • 4 large eggs
  • 2 sticks butter or margarine
  • 1 cup chopped pecans
  • 8 ounces cream cheese
  • 1 teaspoon vanilla
  • 4 cups confectioners' sugar
  • 1 pinch salt

How To Make gooey butter pecan bars

  • Step 1
    Mix together cake mix, one egg, one stick margarine (or butter) and one cup chopped pecans.
  • Step 2
    Pat the above mixture into a 9" x 12" pan, forming crust.
  • Step 3
    Mix together cream cheese, vanilla, one stick margarine (or butter), three eggs, powdered sugar and a pinch of salt.
  • Step 4
    Pour this mixture over crust mixture. Bake at 325 for about 45 minutes.
  • Step 5
    Let cool completely. These are very rich, cut into small, bite size pieces to serve. Store in refrigerator. Really good with coffee. Keeps well for weeks.
