I don't know where this came from, but found it stuck in an old family scrap books. I don't make it very often because I can't stay out of it.

Ingredients

  • 2 cups cake flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/4 cups sugar
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 - eggs
  • - baked on topping as follows
  • 2 - egg whites
  • 1 cup brown sugar
  • 3/4 cup pecans, chopped
  • 1/2 cup shortening

How To Make gone with the wind cake

  • Step 1
    All ingredients should be at room temperature.
  • Step 2
    Preheat oven to 350 degrees.
  • Step 3
    Sift and measure flour.
  • Step 4
    Add baking powder, salt, sugar, and sift again into large mixer bowl.
  • Step 5
    Add shortening, milk, and vanilla. Beat 2 minutes.
  • Step 6
    Add unbeaten eggs, and beat 1 minute more.
  • Step 7
    Pour into greased 9 x 13" pan.
  • Step 8
    BAKED ON TOPPING. Beat egg whites until stiff but not dry.
  • Step 9
    Gradually add brown sugar and beat until well mixed.
  • Step 10
    Spread over the top of the cake batter, sprinkle with nute and bake for 35 minutes.
