I don't know where this came from, but found it stuck in an old family scrap books. I don't make it very often because I can't stay out of it.

Ingredients
- 2 cups cake flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 1/4 cups sugar
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 2 - eggs
- - baked on topping as follows
- 2 - egg whites
- 1 cup brown sugar
- 3/4 cup pecans, chopped
- 1/2 cup shortening
How To Make gone with the wind cake

Step 1All ingredients should be at room temperature.

Step 2Preheat oven to 350 degrees.

Step 3Sift and measure flour.

Step 4Add baking powder, salt, sugar, and sift again into large mixer bowl.

Step 5Add shortening, milk, and vanilla. Beat 2 minutes.

Step 6Add unbeaten eggs, and beat 1 minute more.

Step 7Pour into greased 9 x 13" pan.

Step 8BAKED ON TOPPING. Beat egg whites until stiff but not dry.

Step 9Gradually add brown sugar and beat until well mixed.

Step 10Spread over the top of the cake batter, sprinkle with nute and bake for 35 minutes.
