This is another cupcake that I served at the gallery's open house. It was in the summer so it was perfect for the season. My daughter loves this cupcake the best.

Ingredients
- 1 package golden oreo cookies
- 1 box moist strawberry cake mix
- 1 cup low-fat buttermilk
- 1/2 cup vegetable oil
- 4 - eggs
- - frosting to top cupcakes
- - fresh strawberries to top off cupcakes
How To Make golden strawberry cupcakes

Step 1Preheat oven to 350ºF. Place half of a cookie, cream side up, in the bottom of your cupcake liner. Break about 24 of the remaining cookies into into pieces and set aside.

Step 2Combine cake mix, buttermilk, oil and eggs. Gently fold in the Oreos cookie pieces.

Step 3Spoon batter into cupcake liners, filling them about 2/3 full. Bake approximately 20 minutes or until a toothpick inserted into the center comes out clean. Cool completely and then frost.

Step 4Frost with buttercream or cream cheese frosting. Sprinkle them with crushed Golden Oreo cookies and a strawberry sliver on top.
