Ingredients
- 2/3 cup butter or margarine, softened
- 2 2/3 cups powdered sugar, sifted
- 2 - eggs
- 1 teaspoon vanilla extract
- 1 cup flour
- 1/3 cup yellow cornmeal (polenta)
- 2/3 cup golden raisins
How To Make golden raisin polenta cake

Step 1Cream butter and sugar in large bowl until light. Beat in eggs and vanilla.

Step 2Combine flour, cornmeal, and raisins in small bowl. Stir into batter until well blended.

Step 3Spread batter in a well greased and floured 8 1/2 x 4 1/2 x 2 1/2 loaf pan. Bake in preheated 325 oven for 1 hour and 15 minutes to 1 hour and 25 minutes or until crusty on top and pick in center comes out clean.

Step 4Cool in pan for 10 minutes. Loosen edges, remove from pan. Cool completely on wire rack. Makes 1 loaf.
