gluten free nutella cake in a mug

I was introduced to Nutella when I was an exchange student in Germany back in 1983! I could not get enough of the stuff and took a couple of jars home with me. I was delighted to see it on the grocery store shelves, and always have a jar on hand in case I want some on my toast. Since there are several friends and family members who are now forced to be on gluten free diets, I have been working on recipes for some of the things they love and miss, such as baked goods. I hope this one will make someone happy!

Ingredients

  • 4 tablespoons king arthur gluten free flour mix
  • 1/8 teaspoon baking powder
  • 4 tablespoons granulated white sugar
  • 1 - egg
  • 3 tablespoons cocoa powder
  • 3 tablespoons nutella
  • 3 tablespoons milk
  • 3 tablespoons olive or vegetable oil

How To Make gluten free nutella cake in a mug

  • Step 1
    Combine all ingredients in a large coffee mug, at least 12 ounces. Whisk well with a fork until smooth. Microwave on high for 1-1/2 to 3 minutes, depending on your microwave. Start with 1 minute and add 10 seconds, checking your cake as you go.
  • Step 2
    Let the cake stand for a minute when done, it will be hot! Top with whipped cream and chocolate sauce, if desired.
