This is a traditional French recipe for mini cakes which were supposed to fuel busy bankers on the go! The form is perfect to fit into a breast pocket, but I would not recommend trying that with a good white shirt ;-)

Ingredients
- 40 grams almond flour
- 10 grams cornstarch
- 2 eggwhites
- 40 grams butter
- 40 grams sugar
How To Make gluten free financiers

Step 1Melt the butter, let cool, then preheat oven to 180°C / 350°F

Step 2In a bowl, beat the egg whites with the sugar until just foamy

Step 3Add the cooled melted butter, almond flour and cornstarch

Step 4Pour the batter into financiers tins or mini cake tins (the batter should be only about 1/2 inch high in the form), muffin tins are also possible, as long as the batter doesn't fill more than about 1/2 inch of the tins

Step 5Bake for about 12 minutes, but watch well, if they brown too quickly, remove them from the oven earlier!

Step 6Let cool until you can get them out without breaking them. Eat warm or let cool completely on a rack.
