- 2 cups gluten free oat flour **
- 1 cup sugar
- 1/4 cup baking cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup water
- 1/3 cup canola oil
- 1 teaspoon cider vinegar
- 1/2 teaspoon vanilla extract
- 2 teaspoons confectioners' sugar

Step 1In a large bowl,combine the 1st, 5 ingredients. In another bowl,combine the next, 4 ingredients. Stir into dry ingredients just until moistened.

Step 2Fill paper-lined muffin cups 3/4 full. Bake in a preheated 350 oven for 20-25 minutes or until a toothpick inserted near center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners sugar OR make an icing out of confectioners sugar,water and vanilla.
