Glazed Walnut Cake

1 c
walnuts, shelled
1/4 c
all purpose flour
2 tsp
baking powder
1/2 tsp
1 tsp
cinnamon, ground
3/4 c
brown sugar, light
5 large
1/2 c
1/2 c
orange juice, fresh
1 tsp
vanilla extract
fresh berries to serve on side


1Preheat oven to 350. Butter & flour 9 inch round cake pan.
2Place walnuts, flour, baking powder, salt & cinnamon in a food processor & blend until finely chopped.
3Add brown sugar & eggs and process until smooth.
4Pour the batter into the cake pan & bake for 30-35 minutes or until a toothpick inserted in the center vomes out clean. Remove to a wire rack & cool in pan for 5 minutes.
5Turn cake out of the pan & cool completely on a rack.
6Combine honey, orange juice, & vanilla in a small saucepan over medium low heat & bring to a boil. Poke the cooled cake all over with a toothpick & brush liberally with the glaze. Slice the cake & serve fresh berries on the side.
