Ingredients

CAKE:
-
2 csugar
-
1 1/2 cvegetable oil
-
2 tspcinnamon
-
1 tspallspice
-
2 tspbaking powder
-
1 tspsalt
-
2 tspbaking soda
-
3 cflour
-
4eggs, beaten
-
1 cnuts
-
1 craisins or dates
-
1 tsplemon flavoring
-
1 tspvanilla flavoring
-
2 ccooked pumpkin or 1 no. 2 can pumpkin
-
1/2 ccoconut
-
GLAZE:
-
1 csugar
-
1/2 tspbaking soda
-
1/2 cbuttermilk
-
1 tspvanilla flavoring
How to Make Glazed Pumpkin Cake
- CAKE:
Combine sugar and oil. - Sift spices, baking powder, salt, baking soda and **2 c. of flour together.
- Alternate, adding flour mixture and eggs to sugar mixture.
- Mix nuts and raisins with remaining **1 c. flour.
- Add nut mixture and remaining ingredients to sugar mixture; blend well.
- Bake for 1 hour at 350 degrees.
- Cool for 20 minutes.
- GLAZE:
Combine all ingredients. - Bring to a boil; cook to sof ball stage.
- Pour over hot cake in pan.
