I love the sweetness of a good coffee cake in the morning. Pair that with an equally good cup of coffee and scrambled eggs, and that's a breakfast I can rave about. This is a relatively easy cake to make. Just follow the steps to create the different layers. Don't overwork anything and you will have great success. I particularly like using a mixed berry jam for this recipe, but I leave that up to you. The possibilities are only limited to the flavors of jam available. Have a SWEET MORNING!

Ingredients

  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 3 tablespoons cold unsalted butter
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 large egg, beaten
  • 1/2 cup milk
  • JAM LAYER
  • 1/3 cup jam, any flavor
  • STREUSEL TOPPING
  • 3 tablespoons all purpose flour
  • 3 tablespoons sugar
  • 1-2 pinch salt
  • 2 tablespoons cold unsalted butter
  • 1/2 teaspoon cinnamon
  • CONFECTIONER'S GLAZE
  • 3/4 cup powdered sugar
  • 1/ teaspoon pure vanilla extract
  • 1 1/2-2 tablespoons milk

How To Make glazed jam cake (a coffee cake)

  • Step 1
    Place the first 5 ingredients in a medium bowl. Incorporate the cold butter by using a pastry blender until a coarse meal is achieved.
  • Step 2
    Fold in the milk and beaten egg, just until mixed. Do not over mix.
  • Step 3
    Spread the cake batter in a well buttered 9 inch pie tin.
  • Step 4
    Using a spoon, drop dollops of jam over the cake batter. Using the back of a spoon, carefully spread the jam so that you have an even layer.
  • Step 5
    Place the Streusel ingredients in a small mini-processor. Pulse about 12 pulses to make a slighly lumpy meal.
  • Step 6
    Sprinkle the streusel topping over the cake evenly.
  • Step 7
    Bake in a 375 degree oven for about 27 minutes. Test with a pick.
  • Step 8
    Cool the cake a bit and put the glaze together by mixing in a small bowl. Drizzle the glaze over the cake while it is still warm. Set 10 minutes and serve, or serve later at room temperature.
