The pears and ginger in this cake go well together and there are not many pear cakes that I have seen and the combination is unusual.

Ingredients For ginger pear upside-down cake

  • cake
  • 1 c
    granulated sugar
  • 1/2 c
    butter
  • 1 tsp
    vanilla and 2 large eggs
  • 1 1/2 c
    all purpose flour
  • 1/2 c
    milk
  • 1 Tbsp
    finely chopped crystallized ginger
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    each of nutmeg and cinnamon
  • topping
  • 1/2 c
    packed brown sugar
  • 1/4 c
    butter
  • 2 Tbsp
    corn syrup, light
  • 1 Tbsp
    finely chopped crystallized ginger
  • 2
    ripe pears

How To Make ginger pear upside-down cake

    TOPPING..combine brown sugar, butter and corn syrup in small saucepan. Cook and stir over medium heat for 3 to 5 minutes or until smooth and sugar has melted. Pour into round 9 inch cake pan that has been sprayed with non-stick cooking spray..sprinkle evenly with ginger...set aside.

    CAKE..Preheat oven to 350F..In mixing bowl put in sugar, butter and vanilla and beat until smooth, add eggs and beat until well combined about 4 minutes...add remaining cake ingredients and beat for about 3 minutes.

    Peel, core and slice pear and arrange pear slices evenly over sugar ginger mix..pour cake mixture over pear slices and bake for 45 to 50 minutes or test with toothpick and if clean remove cake from oven place on wire rack and let stand for about 3 minutes in pan and then invert on to serving plate...serve warm or room temperature..with a dollop of ice cream or whipping cream.
