The pears and ginger in this cake go well together and there are not many pear cakes that I have seen and the combination is unusual.

Ingredients

- 1 cup granulated sugar
- 1/2 cup butter
- 1 teaspoon vanilla and 2 large eggs
- 1 1/2 cups all purpose flour
- 1/2 cup milk
- 1 tablespoon finely chopped crystallized ginger
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon each of nutmeg and cinnamon

- 1/2 cup packed brown sugar
- 1/4 cup butter
- 2 tablespoons corn syrup, light
- 1 tablespoon finely chopped crystallized ginger
- 2 - ripe pears
How To Make ginger pear upside-down cake

Step 1TOPPING..combine brown sugar, butter and corn syrup in small saucepan. Cook and stir over medium heat for 3 to 5 minutes or until smooth and sugar has melted. Pour into round 9 inch cake pan that has been sprayed with non-stick cooking spray..sprinkle evenly with ginger...set aside.

Step 2CAKE..Preheat oven to 350F..In mixing bowl put in sugar, butter and vanilla and beat until smooth, add eggs and beat until well combined about 4 minutes...add remaining cake ingredients and beat for about 3 minutes.

Step 3Peel, core and slice pear and arrange pear slices evenly over sugar ginger mix..pour cake mixture over pear slices and bake for 45 to 50 minutes or test with toothpick and if clean remove cake from oven place on wire rack and let stand for about 3 minutes in pan and then invert on to serving plate...serve warm or room temperature..with a dollop of ice cream or whipping cream.
