giant mocha choc cupcake w/blackberry balsamic
I love useing my giant cupcake maker, Its pretty easy to use and I have alot of fun with it! I have used for baby showers and birthdays. Today my daughter asked me to make a chocolate one for her boyfriends birthday. A simple cake mix with some added twist. Hazelnut Mocha Chocolate with a balsamic blackberry filling with a chocolate ganach.

Ingredients
- 1 box dark chocolate cakemix
- 3 - eggs
- 1/3 cup vegetable oil
- 1 cup hazelnut coffee (room temp)
- 1 cup frozen blackberries
- 1/4 cup white balsamic vinegar
- 1 teaspoon sugar
- 2 cups semi sweet chocolate chips
- 1 1/2 cups heavy cream

Step 1Combine cakemix coffee oil and eggs, beate for 2-3min on med.

Step 2Lightly spray silicone cupcake pans. equally distribute cakemix between and put sprayed cake insert to make well for filling. Bake 25=35 min. till toothpick comes out clean. Cool completely before removing from silacone

Step 3Meanwhile in small saucepan add berries, sugar and balsamic and just warm for 5 mins breaking berries down. Let cool.

Step 4When cake is cooled remove insert and remove cakes. Fill welll with berries, add top of cupcake and decorate.

Step 5I made a ganache with warmed cream adding chocolate to melt.
