I’ve read articles on how to improve a cake mix. I added my preferred ingredients. My husband and I liked the cupcakes. I wanted to share the recipe.

Ingredients

  • COCONUT PECAN FROSTING
  • 1 cup granulated sugar
  • 1 stick butter, softened
  • 1 cup evaporated milk
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut
  • 1 cup walnuts, chopped and toasted
  • CUPCAKES
  • 1 box German chocolate cake mix
  • 1 box instant coconut cream pudding (3.4oz)
  • 1/2 cup buttermilk
  • 4 large eggs
  • 1 cup oil
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 1 cup milk chocolate chips

How To Make german chocolate cupcakes

  • Step 1
    Prepare frosting. In a heavy saucepan, combine sugar, butter, evaporated milk, and egg yolks.
  • Step 2
    Cook over medium heat for about 12 minutes; stirring constantly. Remove from heat. Add vanilla, coconut, and walnuts. Set aside.
  • Step 3
    Preheat oven to 325 degrees F. Line muffin pans with cupcake liners.
  • Step 4
    In a large mixing bowl, combine cake mix, pudding mix, buttermilk, eggs, oil, water, and vanilla. Beat for 2 minutes with a mixer on medium speed. Stir in chocolate chips.
  • Step 5
    Using an ice cream scoop, fill the liners 2/3 full. Bake 22-24 mins. or until a toothpick inserted in the center of a cupcake comes out clean. Cool in pans for 5 mins.
  • Step 6
    Frost. Store in refrigerator. Cupcakes can be frozen.
