I’ve read articles on how to improve a cake mix. I added my preferred ingredients. My husband and I liked the cupcakes. I wanted to share the recipe.

Ingredients
- COCONUT PECAN FROSTING
- 1 cup granulated sugar
- 1 stick butter, softened
- 1 cup evaporated milk
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup flaked coconut
- 1 cup walnuts, chopped and toasted
- CUPCAKES
- 1 box German chocolate cake mix
- 1 box instant coconut cream pudding (3.4oz)
- 1/2 cup buttermilk
- 4 large eggs
- 1 cup oil
- 1/2 cup water
- 1 teaspoon vanilla
- 1 cup milk chocolate chips

Step 1Prepare frosting. In a heavy saucepan, combine sugar, butter, evaporated milk, and egg yolks.

Step 2Cook over medium heat for about 12 minutes; stirring constantly. Remove from heat. Add vanilla, coconut, and walnuts. Set aside.

Step 3Preheat oven to 325 degrees F. Line muffin pans with cupcake liners.

Step 4In a large mixing bowl, combine cake mix, pudding mix, buttermilk, eggs, oil, water, and vanilla. Beat for 2 minutes with a mixer on medium speed. Stir in chocolate chips.

Step 5Using an ice cream scoop, fill the liners 2/3 full. Bake 22-24 mins. or until a toothpick inserted in the center of a cupcake comes out clean. Cool in pans for 5 mins.

Step 6Frost. Store in refrigerator. Cupcakes can be frozen.
