I have enjoyed this at her home, many times.
It is a keeper.

4-6tart apples ( med size)
2separate egg yolks.. ( keep separate)
1/2lemon, juiced and the peel grated
1 tspbaking powder
1 Tbsprum or rum extract
1 tspbutter- to grease pan
1 tspvegetable oil
3 Tbsppowdered sugar

- Peel apples, core and cut in half. Cut decorative slits length wise in apples, about 1/2 inch deep. Sprinkle with lemon juice and sugar. Set aside.
Cream butter and sugar together. Then with egg yolks, beat in one at a time.
Gradually beat in lemon juice and and grated peel.
Sift flour and baking powder together. Gradually add to batter. Blend in milk and Rum.
In a small bowl beat egg whites until stiff..Fold into the batter.
Generously grease a springform pan.Pour batter in and top with apple halves, cut side up..Brush apples with oil.
Bake in a preheated 350 oven for 35to 40 minutes..
Remove from pan. Cool.
Sprinkle with powdered sugar.
