georgia's banana cake
A dear friend of our family, and my niece's mother-in-law, gave us this recipe. It's delicious.

Ingredients
- CAKE:
- 2/3 cup shortening
- 2 1/2 cups cake flour, sifted
- 1 2/3 cups sugar
- 1 1/4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/4 cups bananas, mashed
- 2/3 cup buttermilk
- 2 large eggs
- 2/3 cup pecans, chopped
- BUTTERCREAM FROSTING
- 1/3 cup butter, softened
- 1 package (8 oz) cream cheese, softened
- 1 box powdered sugar (16 oz)
- 1 large egg yolk
- 1 1/2 teaspoons vanilla
- 2 tablespoons milk
How To Make georgia's banana cake

Step 1For the cake: Do NOT use a mixer ... Stir shortening to soften; sift in dry ingredients. Add bananas and 1/2 of the buttermilk. Mix until flour is dampened.

Step 2Beat vigorously by hand for 2 minutes. Add remaining buttermilk and eggs; beat 2 minutes longer by hand. Fold in nuts.

Step 3Pour into 2 greased and floured round cake pans. Bake at 350 degrees for app. 35 minutes.

Step 4Remove from oven and cool on wire rack before inverting onto cake plan and frosting.

Step 5For the frosting: Mixer allowed. Cream butter and cream cheese gradually with about 1/2 box of sugar; blend well.

Step 6Beat in egg yolk and vanilla; gradually blend in remaining sugar. Add enough milk to make frosting a good spreading consistency. Ice layers.
