Georgia Cornbread Cake

I learned how to make this wonderfully delightful little cake when I was cooking at a small restaurant many years ago. It is so addictive ! Don't let the name fool ya, it's not really cornbread, but a sweet and nutty cake that kind of resembles cornbread, hence the name. I serve it plain, but some people serve it with a caramel sauce drizzled over it.

  • 4 large
  • 1 c
  • 1 c
    brown sugar, firmly packed
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    self rising flour
  • 2 c
    chopped pecans

How to Make Georgia Cornbread Cake


  1. In large bowl add eggs and beat then add sugar, brown sugar and vanilla. Mix well then add the flour, mix add the nuts and stir.
  2. Pour into a greased 9x13 pan (I use a metal pan) and bake for 35 minutes at 350F. The center of cake will be kind of soft. Let cool completely before cutting into squares. Makes 28 squares
