Georgia Cornbread Cake

I learned how to make this wonderfully delightful little cake when I was cooking at a small restaurant many years ago. It is so addictive ! Don't let the name fool ya, it's not really cornbread, but a sweet and nutty cake that kind of resembles cornbread, hence the name. I serve it plain, but some people serve it with a caramel sauce drizzled over it.

1 c
brown sugar, firmly packed
1 tsp
vanilla extract
1 1/2 c
self rising flour
2 c
chopped pecans

How to Make Georgia Cornbread Cake


  • 1In large bowl add eggs and beat then add sugar, brown sugar and vanilla. Mix well then add the flour, mix add the nuts and stir.
  • 2Pour into a greased 9x13 pan (I use a metal pan) and bake for 35 minutes at 350F. The center of cake will be kind of soft. Let cool completely before cutting into squares. Makes 28 squares
