gama's apple spice cake
While sitting in the Doctor's office yesterday I ran across this recipe in Woman's Day. It looks so good I asked the girls to copy it for me and thought I would post it.

Ingredients
- 3 - granny smith apples, halved and cut into 1/2
- 2 - macintosh apples, halved and cut into 1/2
- 1 tablespoon fresh lemon juice, plus a 1/4 teaspoon of lemon zest
- 3 cups all purpose flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon kosher salt
- 1 1/8 teaspoons ground cinnamon
- 4 - large eggs
- 2 cups granulated sugar
- 1 cup vegetable oil
- 1/2 cup orange juice
- 2 1/2 teaspoons pure vanilla extract
- - confectioner's sugar
How To Make gama's apple spice cake

Step 1Preheat oven to 350*

Step 2Coat a 9 x 13 inch baking pan with cooking spray. Line with parchment leaving an overhang on two sides.

Step 3In a large bowl, toss the apples with the lemon juice.

Step 4I am medium bowl whisk together the flour, baking soda, salt and 1 tsp. cinnamom.

Step 5In a large bowl, whisk the eggs, granulated sugar, oil,orange juice and vanilla

Step 6Add the flour mixture and whisk together. Add half the apples and mix to combine.

Step 7Spread into prepared pan.

Step 8Arrange the remaining apples on top. Sprinkle with the remaining cinnamon.

Step 9Bake 55 to 60 minutes until a wooden pick inserted into the center comes out clean.

Step 10Let cool for 15 mintues in the pan, using the overhang, transfer cake to wire rack to cool completely: Dust with confectioner's sugar. Carefully peel off the parchment paper and place on serving dish.
