Gama's Apple Spice Cake

Ingredients

3granny smith apples, halved and cut into 1/2

2macintosh apples, halved and cut into 1/2

1 Tbspfresh lemon juice, plus a 1/4 teaspoon of lemon zest

3 call purpose flour
-
1 1/2 tspbaking soda

1/4 tspkosher salt
-
1 1/8 tspground cinnamon

4large eggs
-
2 cgranulated sugar
-
1 cvegetable oil
-
1/2 corange juice
-
2 1/2 tsppure vanilla extract

·confectioner's sugar
How to Make Gama's Apple Spice Cake
- Preheat oven to 350*
- Coat a 9 x 13 inch baking pan with cooking spray. Line with parchment leaving an overhang on two sides.
- In a large bowl, toss the apples with the lemon juice.
- I am medium bowl whisk together the flour, baking soda, salt and 1 tsp. cinnamom.
- In a large bowl, whisk the eggs, granulated sugar, oil,orange juice and vanilla
- Add the flour mixture and whisk together. Add half the apples and mix to combine.
- Spread into prepared pan.
- Arrange the remaining apples on top. Sprinkle with the remaining cinnamon.
- Bake 55 to 60 minutes until a wooden pick inserted into the center comes out clean.
- Let cool for 15 mintues in the pan, using the overhang, transfer cake to wire rack to cool completely: Dust with confectioner's sugar.
Carefully peel off the parchment paper and place on serving dish.
