Ingredients
- 3 - granny smith apples, cut in 1/2 inch wedges
- 2 - macintosh apples cut in 1/2 inch wedges
- 1 tablespoon lemon juice
- 3 cups flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon kosher salt
- 1 1/2 teaspoons ground cinnamon
- 4 - eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1/2 cup orange juice
- 2 1/2 teaspoons vanilla
- - confectioners' sugar
How To Make "gama's apple spice cake"

Step 1Heat oven to 350 degrees, Coat a 9 x 13 pan with cooking spray. Line pan with parchment, leaving an overhang on two sides.

Step 2In a large bowl toss apple slices with lemon juice. Set aside.

Step 3In a large bowl whisk together the eggs, sugar, oil, orange juice and vanilla.

Step 4Mix the flour, salt, baking soda and 1 tsp cinnamon. Add this mixture to the egg mixture and blend well. Add 1/2 the apples and mix to combine. Spread in the prepared pan. Cover with remaining apples and rest of cinnamon.

Step 5Bake until wooden pick inserted in the center comes out clean. 55 to 70 minutes. Let cool for 15 minutes in pan, using the overhang then transfer the cake to platter, slide out the parchment paper. When cooled completely, dust with confectioners' sugar.
