"Fyne Cakes" is what my family's recipe for "Shortbread" is called.

Ingredients
- 1 1/2 sticks unsalted butter
- 1/2 cup white granulated sugar
- 1 - egg (seperate white from yolk)
- 1 3/4 cups sifted flour
- 1/2 teaspoon ground clove
- 1/8 teaspoon ground mace
- 1 pinch ground saffron (optional)
How To Make fyne cakes

Step 1Cream butter and sugar until fluffy

Step 2Add yolk and beat until well combined.

Step 3Mix all the dry ingredients together in another bowl or measuring cup

Step 4Add to wet ingredients and mix well.

Step 5Put mixture into greased 9in pan.

Step 6Brush top with egg white (this is what gives it that wafer top)

Step 7Bake 1 hour and cut hot but then let cool completely.
