Almost everyone likes funnel cakes - so here's a recipe to keep you from running to the store for that boxed mix. Enjoy!

Ingredients
- 2 - eggs, beaten
- 1 1/2 cups milk
- 2 cups all purpose flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups cooking oil (vegetable, canola - whatever you like to use)
How To Make funnel cake

Step 1In mixing bowl, combine the eggs and milk.

Step 2Sift together the flour, baking powder, and salt. Add to egg mixture; beat til smooth with mixer. (Test mixture to see if it flows easily thru your funnel. If too thick add a little milk - If too thin add a little flour.)

Step 3In 8 inch skillet, heat oil to 360 degrees. Covering bottom opening of funnel with finger, pour a generous 1/2 cup of batter into the funnel. Remove finger and release batter into hot oil in a spiral shape.

Step 4Fry til golden brown - about 3 minutes. Using tongs, turn carefully and cook another minute or so. Drain on paper towel and sprinkle with sifted confectioner's sugar (powdered sugar). This makes about 4 funnel cakes. - Enjoy!
