FUDGE MINT CAKE is divine, but "Health Nuts" like me may prefer this version. It uses all organic and healthful ingredients.The cocoa powder supplies calcium and the carob powder supplies magnesium. Your bones will love it!

Ingredients
- 2 cups flour (choose from or mix the following equivalents: 2 c. whole wheat flour, 1 3/4 c. amaranth flour, 1 1/2 c. organic corn flour, 1 1/2 c. millet flour, 1 3/4 c potato flour, etc.)
- 1 tablespoon baking soda (double this when using dark flours)
- 3 tablespoons raw organic cocoa powder
- 3 tablespoons organic carob powder
- 1 tablespoon xanthum gum or arrowroot
- 1 cup sucanat (or equivalent: 1 tsp. stevia powder or liquid; 2/3 c. molasses; or use part maple syrup and reduce oil slightly)
- 1/2 teaspoon himalayan crystal salt or celtic sea salt
- 1 1/2 cups unsweetened organic applesauce
- 1/4 cup melted virgin coconut oil
- 1 tablespoon natural vanilla (or homemade equivalent)
- 1 tablespoon organic peppermint extract

Step 1Whisk dry ingredients together in large bowl until well blended:

Step 2In a smaller bowl, mix the wet ingredients and blend them quickly into the dry ingredients with a few strokes.

Step 3Pour into a lightly oiled 10-inch bundt pan or 12 cupcake molds. Bake 50-60 minutes, until a toothpick comes out just covered with with moist crumbs. Cool on rack and then drizzle melted organic chocolate over the top.
