FUDGY MINTY HEALTH NUT CAKE
2 cflour (choose from or mix the following equivalents: 2 c. whole wheat flour, 1 3/4 c. amaranth flour, 1 1/2 c. organic corn flour, 1 1/2 c. millet flour, 1 3/4 c potato flour, etc.)
1 Tbspbaking soda (double this when using dark flours)
3 Tbspraw organic cocoa powder
3 Tbsporganic carob powder
1 Tbspxanthum gum or arrowroot
1 csucanat (or equivalent: 1 tsp. stevia powder or liquid; 2/3 c. molasses; or use part maple syrup and reduce oil slightly)
1/2 tsphimalayan crystal salt or celtic sea salt
1 1/2 cunsweetened organic applesauce
1/4 cmelted virgin coconut oil
1 Tbspnatural vanilla (or homemade equivalent)
1 Tbsporganic peppermint extract
How to Make FUDGY MINTY HEALTH NUT CAKE
- Whisk dry ingredients together in large bowl until well blended:
- In a smaller bowl, mix the wet ingredients and blend them quickly into the dry ingredients with a few strokes.
- Pour into a lightly oiled 10-inch bundt pan or 12 cupcake molds.
Bake 50-60 minutes, until a toothpick comes out just covered with with moist crumbs.
Cool on rack and then drizzle melted organic chocolate over the top.
