FUDGY MINT CAKE
SIFT INTO A LARGE BOWL AND WHISK TOGETHER:
2 c2 cups all-purpose flour
2 tspbaking soda
6 Tbspunsweetened cocoa powder
1 cwhite sugar
1 3/4 cunsweetened applesauce
1/4 coil (olive is best)
1 Tbsppeppermint extract
How to Make FUDGY MINT CAKE
- Whisk dry ingredients together in a medium bowl. Mix wet ingredients in a smaller bowl and stir into flour mixture with a few quick strokes.
- Pour into a lightly oiled 10-inch bundt pan, or a dozen cupcake molds.
Bake cake 50-60 minutes, cupcakes less -- until a toothpick comes out just moist.
Cool on rack and frost with a glaze icing
